Our Story
Blue Waffles was founded in 2017 by Chef Marina Voss, a San Diego native and culinary school graduate who wanted to do something no one else in the city was doing: create a breakfast experience that was as visually stunning as it was delicious. Armed with a cast-iron waffle iron, a passion for natural food coloring from butterfly pea flower, and an obsession with achieving the perfect crisp-to-fluff ratio, Marina opened our first 12-seat café in the North Park neighborhood. The line stretched around the block on day one — and it hasn't stopped since.
We believe breakfast should be an event. Every waffle at Blue Waffles is made from scratch using locally sourced ingredients, real blueberries, and our signature butterfly pea flower extract that gives each waffle its iconic, vibrant blue hue. We partner with San Diego farms for fresh eggs and dairy, and every topping — from our whipped mascarpone to our lavender honey drizzle — is prepared in-house daily. We don't cut corners, and our guests taste the difference in every single bite.

Our baristas are the first smiling face guests encounter and an essential part of the Blue Waffles experience. You'll craft our signature butterfly pea lattes, specialty espresso drinks, and fresh-pressed juices with care and consistency. A passion for great coffee and genuine hospitality is a must. Training provided for the right candidate.
We're searching for friendly, attentive servers who love connecting with people and take pride in delivering an excellent dining experience.
